This fungus belongs to the most commonly collected oyster mushroom species in our country. Its caps grow from 5 to 25 cm broad. Younger specimens take on a crescent shape that sometimes turns fan-shaped or funnel-shaped. It takes on different colours, from brown, dusty brown, through grey and steely blue to slightly purple. Its gills are dense and grow onto the stem. Oyster mushrooms contain plenty of easily assimilable protein and minimal amounts of sugar. They are also rich in magnesium, phosphorus, kalium, iron, zinc and selenium. You will also find some compounds that prevent from certain kinds of cancer in them. Consumption of oyster mushrooms helps lower cholesterene level in blood. They are fitted for drying, marinating and freezing.
